This manual, aimed primarily at hunters, offers guidelines for the correct use of the meat of ungulates. The purpose of this volume is to promote the culture and technology of the processing of the meat, not only for restricted family use, but also referring to a wide economic sector. The book also proposes some recipes that enhance the use of wild ungulate meat in the kitchen.
